The pistachio is a dry fruit produced by a shrub of 3 to 10 meters. Cultivated 3000 to 4000 years ago in the Middle East, it was then exported and cultivated in Mediterranean areas.
The fruit is widely used in food, often grilled for an aperitif but also sweetened or plain in pastries. The sweet flavors typical of the pistachio and its almond notes are also very popular in drinks.
