Lychee is a small fruit from a large tropical tree (9-15m). Originally from China, it is now grown in China, India, Madagascar and Thailand.
Beneath its thick pink-red skin, the flesh of the fruit is white-translucent, juicy, sweet and slightly tart. The fruit can be eaten simply peeled, or cooked, but also prepared in juice as is, or mixed into a drink.

Equivalence in lychee juice used: 10% minimum.
