The molasses undergoes a cool fermentation (18 to 24 degrees) for an approximate duration of 10 days. This choice of fermentation makes it possible to preserve an aromatic freshness which will be concentrated during the distillation stage.
To produce the white rum, Bougainville proceeds to a unique distillation of the musts in hybrid stills of 400 liters with a column passage which allows them to obtain a beautifully aromatic distillate grading between 89 and 91 degrees of alcohol before it is slowly reduced to the desired degree.
