50 ml wild Madagascar pepper infused pear eau-de-vie

1 trait chocolate bitters

- Glass : rocks
- Method : stir
- Ice : cubed
- Garnish : orange zest, candied ginger
- Pour the ingredients into a mixing glass
- Ice up 2/3 of the mixing glass with cubed ice
- Stir with a barspoon for 15 to 20 seconds
- Strain into a ice-filled glass
- Garnish & serve
Leave 10 g of wild Voatsiperifery pepper from Madagascar (Piper Borbonense) to infuse in 500 ml of pear eau-de-vie for 2 hours, and strain before use.
